The whole process will take place already in the oven, and we will only have to watch the rudiness through the oven door in order to prevent burning.

However, the dough for buns on kefir without yeast should not be tight, steep, clogged with flour. It is enough to knead it to this consistency - thick, but sticky:

For the convenience of the recipe for kefir buns, I give it for one serving, this is just for one medium baking sheet with high sides. I use just such a form, in it the buns sit closely to each other, like freckles and high walls “hold back” the fluffy nostril dough. It may seem too tender to you during work, but I advise you not to be too tempted to mix excess flour into it. Is that a little dust on the table or work surface.

When the rolls are baked, the pastry will look more like one big tall jam pie. It will need to be cooled well so that the aroma of the fermented milk product goes away. Then the buns can be broken in rows and torn off from the common pie.

Cooking process:

1. From the very beginning, you need to take the yeast, place it in a suitable dish, for example, in a deep plate and pour it with kefir or sour milk. Sour milk should be at room temperature, you can warm it up a little, but not much. If the liquid is hot, the yeast will not start working, but will simply deteriorate. Now it remains to wait until the yeast begins to ferment slightly. I chose Saf Moment dry quick-acting yeast for baking, Voronezhsky still works well. I prefer to use only these two types, baking has neither a yeasty taste nor an unpleasant smell.

2. Now let's move on to other components. We take an egg, add sugar to it and beat it with a whisk, until the sugar is completely dissolved. You don’t need to whip until the foam, because we are not making a biscuit, but buns.

3. Butter must be melted before kneading. If you have a microwave, place the butter in a bowl and place in the oven for 1-2 minutes. It is very important that the oil does not boil, but simply melts. I often just cut the butter into small pieces, put it in a frying pan and put it on the fire. As soon as the butter begins to melt, I remove it and stir with a spoon until smooth.

4. Take a bowl, or the container in which we usually knead the dough. Pour fermented yeast, beaten egg, melted butter, salt and vanillin into it. Next, add the sifted wheat flour and knead the dough. It is better to add flour little by little, mixing it, so our dough for kefir buns will be light and airy.

5. Knead the dough well, then put it neatly in a deep bowl and put it in a warm place for 35 - 50 minutes so that the dough rises. If you are baking in the winter, then the place near the battery will be ideal for the dough.

6. Here is the yeast dough for the buns has risen. It has more than doubled in size. We take it out of the form where it rose, and once again lightly knead it, using a kitchen table sprinkled with flour or greased with vegetable oil.

9. Now we take a high rectangular baking sheet, grease it with vegetable oil and put marmalade balls close enough on it. During proofing, the buns with jam will increase in size together. A baking sheet for a good rise must be placed in a warm place, for this purpose I use the hob of the stove, while the oven is already warming up. 30-40 minutes is enough to lift buns on kefir.

10. Before parting, the top of the Friendly Family buns should be greased with a beaten egg, or even better, only with yolk. The yolk will give the pastry a more beautiful dark color. Sprinkle the top of each bun with a mixture of sugar and ground cinnamon. This topping will definitely give you away to your neighbors, the aroma of delicious homemade cakes will spread not only around the apartment, but also outside it.

11. We are waiting for the buns to increase in size, take our baking sheet and put it carefully in a well-heated oven. We bake buns "Friendly family" at a temperature of 180 degrees. The baking itself does not last long, about 30-35 minutes. The readiness of the dough is easy to check with a wooden stick, if dry, the buns are ready.

12. Buns are ready, they can be removed from the oven. Let them cool a little first, then they will easily come out of the mold. Then they will need to be transferred first to a clean kitchen towel and wrapped, and then carefully separated by hand and folded onto a beautiful dish.
