How can you get kombucha. Growing kombucha at home

Unfortunately, few people in our time know Kombucha, which helps to solve complex problems with the inferiority of modern nutrition, often poor in vitamins and microelements necessary for the body.

This mushroom is unusual. It does not grow in the forest, but in tea. Such a homemade mushroom in a teapot.

In appearance, it looks like a round cake, and the infusion obtained from it has a pleasant sour taste reminiscent of kvass and is very useful.

First, let's look at what tea fungus is. This is a jellyfish organism, which is formed as a result of the coexistence of an acetic acid bacterium and a yeast fungus (in the photo it is presented in all its glory).

It can grow and live only in tea, because it needs the purines contained in the tea infusion, which it consumes without using other components.

The body of the fungus, medusomycete, is on the surface of the tea solution. The upper part of its body is light, and the lower part, immersed in the liquid, is dark, with thread-like processes.

A tincture of a miracle mushroom will turn out to be useful only if it is grown and used correctly.

Below, in addition to how to grow kombucha from scratch, you can find out a lot of useful information that will help get rid of health and well-being problems.

Self-cultivation of kombucha

No one knows who and when the first kombucha was grown. This discovery happened many thousands of years ago and has been successfully used by people in the household to this day.

Before the war, an infusion of it was in almost every home. The shortage of tea and sugar in the post-war period led to the disappearance of this tradition. Now interest has resumed and many would like to know the cultivation recipe.

To grow kombucha from scratch, you have to be patient. This lengthy process takes from one and a half to two months. But to improve your own health and the health of your family, this is not a long time.

Method number 1: from brewing black tea

To prepare a nutrient medium in which our fungus will originate and grow, you will need the following components:

You need to grow a mushroom by protecting the jar with it from sunlight, but not in the dark.

Since he needs light and air for life, the neck of the jar is covered not with a lid, but with gauze, and tea is never poured to the top of the jar, filling it only halfway.

Tea leaves are poured into a teapot, insisted, sugar is added.

In a prepared glass jar, washed with baking soda, the tea leaves are poured from the kettle, after filtering it, the neck of the jar is tied with gauze and placed in a warm, shaded place.

After a couple of weeks or a little earlier, a vinegary aroma will come out of the jar, which will disappear after a week.

So the successful formation of kombucha began.

After a month and a half, a thin slimy “pancake” will appear on the surface of the tea leaves.

This is a young kombucha.

For further successful growth, carefully, without injuring the body of the fungus, move it to a clean three-liter jar filled with weak tea.

Method number 2: from the infusion of wild rose

The method of growing kombucha based on rosehip tea has its own characteristics. Rosehip drink will be richer in vitamins and useful in the cold season for colds.

It is also necessary to take into account contraindications to the use of wild rose, such as a tendency to form kidney stones.

Components for welding:

  • Half a liter of boiling water;
  • 4 large spoons of dry pounded rose hips;
  • Brewing large-leaf black tea (1 large teaspoon per cup of boiling water);
  • 5 large spoons of sugar;
  • Thermos;
  • Clean glass jar;
  • Gauze.

4 tablespoons of wild rose are poured into a thermos, half a liter of hot boiled water is added. Insist in a thermos for 4 days.

The resulting rosehip infusion is poured into a clean three-liter jar, filtering it through cheesecloth. Add to the same jar a glass of sweet tea leaves, in which 5 large spoons of sugar were dissolved.

Tie the neck of the jar with gauze and put in a warm dark place.

As when grown in a normal tea brew, a vinegary smell will first appear, indicating the birth of an organism. Then the smell will disappear and in a month and a half a film will appear on the surface of the infusion - the body of the fungus.

Now you know how to grow kombucha from scratch yourself and you simply cannot help but take advantage of this knowledge, because the improvement of the most valuable thing that a person has - health depends on it!

Proper care of kombucha

It is not enough to grow this miracle doctor, you still need to be able to save it. So, our advice will help you in this difficult matter.

Strange as it may sound, Kombucha is a lover of cleanliness. This grown jellyfish is not just some kind of mold, but a living organism that needs to be monitored.

If the dishes in which he lives are dirty, then the fungus will start to hurt. Then the drink produced by him will be cloudy and will not bring benefits.

The mushroom lives in tea, floating on its surface in a three-liter jar. The diseased organism sinks to the bottom of the jar and the drink produced by it is not worth drinking, the fungus must be treated.

They wash the body of the fungus, dividing it into layers, if it exfoliates, they move it to a clean jar, pour it with fresh tea.

Using tea kvass, which was formed as a result of the vital activity of the fungus, add a new nutrient solution (2 liters of boiled water - 4 large spoons of leaf tea and 1 glass of sugar).

If the whole kvass is drained, the jar is thoroughly washed with baking soda while the mushroom is on a plate of a suitable size, and then sweet tea is poured.

The mushroom itself loves to bathe, so once a month it is gently washed in a cup of clean warm water.

Fresh tea for him is prepared on good water purified from impurities.

You can’t pour sugar on the mushroom, he doesn’t like it. Pour it with cooled strained tea with sugar mixed in it.

The normal thickness of an adult kombucha is about 4 cm. If it is thicker, it may begin to exfoliate. With hands, without using a knife, separate the layers and place the young mushrooms in new jars.

If it is necessary to leave and there is no one to look after the mushroom, it is taken out of tea, transferred to plain water and put in the refrigerator.

The frequency with which the finished tea kvass is drained is determined by taste. Lovers of sour kvass take it 1 time every four days, a less acidic infusion is ready 2 days after adding new tea to a jar with a beneficial organism.

By the way, the jar in which the mushroom lives is not advised to be filled to the top, let it be one and a half to two liters of liquid.

Do not put the mushroom in direct sunlight so that it does not get sick and does not die. The optimum temperature in the room is 18-25 degrees.

By putting into practice the knowledge gained and including a "mushroom" infusion for daily use in your diet, you will soon feel an improvement in health and a good mood will become a constant companion of your life.

For more information about this unique product, watch the video below:

Each of us at least once in our lives, but met with such an interesting product as kombucha. The Japanese call it seaweed, which looks like a jellyfish with a smooth top and a loose bottom, where the yeast bacteria are located, which are the basis for making tea. Let's talk about how to grow kombucha from scratch today.

The identity of the person who first grew this unique product has not yet been established. But this became known many thousands of years ago, successfully using it for therapeutic and prophylactic purposes to this day.

How to grow kombucha at home? There are several recipes for this, but the main and simplest one is, of course, from tea brewing, which is logical, based on the name. It is also grown from rose hips, apple cider vinegar, beer, herbs and a piece of layer, which will be discussed further.

Growing from scratch from tea

To create an optimal nutrient medium for the emergence and cultivation of the fungus, certain components will be required:

  • glass containers (3 liters), previously cleanly washed with baking soda;
  • pure (without additives) leaf black tea - 5 small spoons;
  • granulated sugar - 7 tablespoons;
  • piece of gauze or bandage.

Pour the prepared amount of tea into the teapot, insist and add sugar. Pour the tea leaves into the prepared container, which must be strained and tied with gauze or a piece of bandage around the top of the can, placing it in a warm place, protected from direct sunlight.

After some time - from 1 to 2 weeks, you should smell the vinegar from the container. It will disappear after about 7 days, which will indicate the successful formation of the final product.

After a month and a half, you will see a pancake at the top with a mucous base. This is a young kombucha, which must be carefully transferred to another similar container filled with tea leaves (weak).

Growing with apple cider vinegar

Medusomycete (another product name) on apple cider vinegar is grown independently as follows:

  1. Clean and dry apples (sour) are rubbed completely with the middle using a coarse grater. It should be about 400 grams.
  2. The apple mass is placed in a pre-washed three-liter jar and poured with boiled chilled water.
  3. Honey (150 g) and yeast (15 gram pack) are added to the composition.
  4. The container (open) is placed in a dark place with daily stirring of the contents.

After 10 days, the mixture is squeezed out (several layers of gauze), and the liquid is poured into another similar container, covered with a clean natural cloth (thin) and left alone for 2 months.

The completion of cooking is marked by the clarification of the composition in the jar and the appearance of a jellyfish at the top, which has several layers. The finished mushroom must be transferred to a clean bowl, where sweet tea is poured and then proceed as in the previous method.

How to grow from scratch from a piece of layer

For this method of breeding the product, you will need a small piece of a ready-made mushroom.

For its growth, you need to prepare a special solution:

  • ordinary tea is brewed in the proportion of 1 liter of water to 2 tsp. tea leaves. At the same time, it doesn’t matter which composition you choose - black and green will do, the main thing is without additives;
  • put sugar in the tea leaves, no more than 50 g, stir until the sweet crystals are completely dissolved;
  • cool to room temperature and pour into a jar.

Important: the dishes must be perfectly clean, otherwise mold will appear and spoil the drink.

Place the existing piece of mushroom in the container and cover the top with gauze (fold several layers), put in a warm and slightly darkened room.

After 10 days, or maybe 7, you will be able to taste a tasty and healthy liquid. The finished composition does not need to be covered with a lid, it must breathe all the time.

Tea mushroom from rosehip infusion

Such a drink will be especially useful in the cold season, perfectly protecting the body from colds:

  1. Pour dry mashed rosehip composition (4 tbsp) into the prepared thermos.
  2. Pour 0.5 liters of boiling water over it and leave it alone for 4 days.
  3. Pour the prepared rosehip infusion into prepared glass containers (3 liters), after filtering.
  4. Add 5 tablespoons of granulated sugar to the drink, and tie the neck with gauze, put in heat and darkness.

Grow a mushroom on beer

Combine live beer (100 ml), wine vinegar (10 ml) and sugar (5 g), pouring the mixture into a container, covering the neck. Such a composition is infused similarly to the previous recipes, until a kind of film appears on the surface. As soon as it gains a thickness of 2 mm, it will immediately need to be transferred to a container where sweet tea has already been poured. After 7 days, the drink will be ready to drink.

Herbal kombucha

The preparation of a healing composition on herbs is similar to the previous one. But the herbs you choose based on the existing health problem.

Proportions - for 200 g of herbal collection, 3 liters of boiled water are taken, leaving the composition overnight. After that, add a little honey and put the jellyfish there. After 7 days you will receive a healing herbal infusion.

Which of the above options you use is up to you to decide, but each of them will help not only to enjoy a peculiar taste, but also fill the body with a mass of useful and necessary substances.

Proper care

Growing a mushroom is only half the battle, after that it is also important to preserve it so that it can help all members of your family stay healthy for a long time.

Medusomycete is not just a mold, but also a living organism that requires certain care:

  • the jar where the mushroom is located must be absolutely clean, otherwise it will get sick and cease to be useful;
  • it is necessary to wash the body in layers, each separately once a month in plain water. And when exfoliating, it should be moved to another similar container, pouring fresh tea. It happens when the body of the fungus becomes thicker than 4 cm. In this case, each layer must be moved to a separate bowl;
  • each time after pouring to drink a drink, add a solution of boiled water, loose tea and sugar in proportions of 2l / 4 tbsp / 1 cup, respectively;
  • when emptying the dishes, transfer the mushroom to the dishes, wash the container with soda and pour in a fresh composition, placing the washed organism there;
  • in no case do not pour sugar on the surface of the mushroom;
  • it is not necessary to fill the jar with liquid to the top, a sufficient volume is 2 liters;
  • the temperature in the room where this organism lives should be between 18-25 degrees;
  • if you have to leave home for a long time, put the mushroom in a bowl with plain water and refrigerate.

When you need to drain the brewed tea for the mushroom, determine for yourself to taste - for lovers of an acidic drink, it is recommended to do this every 4 days, for a less acidic composition - every 2.

Important: if the mushroom is sick, then it sinks to the bottom of the container. In this case, it will need to be cured, and only after that drink kvass.

Storage rules

Many people drink kombucha only during the summer. For long winter storage, the body is placed in polyethylene and placed in the vegetable compartment of the refrigerator.

You can dry the body and store it in this state in a kitchen cabinet or refrigerator. To do this, it must be removed from the jar, washed and placed in a deep plate, covered with gauze or a clean piece of natural cloth. Turn it over periodically until completely dry.

To revitalize the fungus, simply prepare a classic tea drink recipe and place it there. Already after 7 days the fungus will come to life. But the first drink after this process will need to be poured out, and the next one is already suitable for consumption.

There are certain rules that will help keep the body in good shape for many years:

  1. Periodically sterilize the container where the fungus lives.
  2. Strain the drink with a plastic strainer.
  3. The jar should be away from drafts and a lot of light.
  4. Washing the body in the summer - 1 time in 7 days, winter - less often.
  5. When pouring a new tea composition, make sure that grains of sugar and tea leaves do not get on the body.

And be sure to carefully inspect the body for the appearance of mold, damage and diseased areas. This will protect you from the undesirable consequences of drinking a low-quality drink.

About the benefits of kombucha

The Japanese call it "sea kale", and it looks like a brown-pink and white-yellow jellyfish, which has a loose underside and a smooth surface. Such an organism - a symbiosis of acetic acid bacteria and yeast - is called a medusa mycete. It produces a sweet and sour drink of wonderful taste - kombucha, which is similar to kvass from tea and perfectly quenches thirst even in the heat, enriching the body with vitamins.

How to grow kombucha from scratch, we will consider in this article several options for its preparation, which we will discuss below using photo and video material.

Growing tea from scratch

Growing your own kombucha is absolutely easy. For the nutritious and optimal environment that is necessary for the birth and cultivation of this miracle, you will need:

  • 3 liter glass jar, pre-washed with baking soda;
  • Steep boiling water - ½ liter;
  • Sugar - about 7 tbsp. spoons;
  • Black tea - 5 tbsp. spoons;
  • Gauze fabric.

Cooking scheme:

  1. Prepare tea leaves from boiling water and black tea, add granulated sugar, mix thoroughly. When it cools, strain through a gauze filter into a jar;
  2. We cover the contents with two layers of gauze, put it in a dark and warm place, preferably in the kitchen, and wait 1.5 months;
  3. The sourdough in the container will smell like vinegar in ten days, and if this smell disappears after a week, then the product has formed correctly;
  4. After a certain time, a mushroom film forms on the surface, which will increasingly resemble a multilayer pancake with a mucous base;
  5. The resulting “young organism” is carefully transferred to another container with weak tea leaves. Somewhere in 5-6 months, it will get stronger, and with its help it will be possible to prepare a miraculous "elixir" daily. It is washed monthly with warm water.

Growing kombucha with apple cider vinegar

They have long been known since the days of the Soviet Union. Our mothers and grandmothers also cultivated this miracle with pleasure.

  1. Sour apples (clean) rub together with the core on a coarse grater. The finished product should be about 400 grams;
  2. We take a clean three-liter jar, put the apple mass in it and fill it with cooled boiled water;
  3. Add 150 g of honey and a 15-gram pack of yeast;
  4. We put the container open in the dark, and mix the contents every day;
  5. After 10 days, squeeze the composition through multilayer gauze, pour the liquid into another jar, which we cover with a cloth, and remove for 2 months;
  6. At the end of the cooking process, the composition in the dishes brightens, and a zooglea with several layers forms on top. It must be transferred to a clean container with sweet tea and everything should be done further, as in the previous method.

How to make a medusomycete from a piece of a layer from scratch

If you don't want to wait a few months, you can make kombucha by taking out a small piece of kombucha. To make it grow, we will prepare a special solution.

You will need:

  • Liter of boiling water;
  • Sugar - about 50 g.

Cooking instruction:

  1. We brew ordinary tea;
  2. We put granulated sugar there, mix until completely dissolved;
  3. Cool and pour into a glass, perfectly clean container (otherwise the fungus will get sick);
  4. We put a piece of "seaweed" in it and cover the top with several layers of gauze;
  5. We put the jar in a slightly darkened and warm room;
  6. After 7-10 days, a tasty and healthy "kombucha" is formed.

The fungus will slowly grow, and delight you with new layers. The level of the "elixir" in the container will decrease (evaporate). You need to watch this and, if necessary, add sweet gulls. Sometimes you should rinse the container and replace the tea in it. Once every 15-20 days, the “jellyfish” itself is washed with running, necessarily warm water.

How can you grow zooglea from rosehip infusion

  5. The mushroom film will become clearly visible in one and a half to two months.

Then the young organism is grown like a regular kombucha. Rosehip broth is again poured into the dishes with tea leaves.

Growing mushrooms on beer

  3. Sprinkle 3 tablespoons of sugar.

Proper care of kombucha

If the "seaweed" is not properly handled, it will lose its beneficial properties. A few important rules on how to cook kombucha at home:

  1. The container is not tightly closed - the body must always "breathe";
  2. It is not filled with hot liquid. It is first boiled and then cooled;
  3. 2 times a week, the medusomycete is "fed" with sweet tea;
  4. It must be protected from getting sugar grains and tea leaves on it so that the process of decay does not begin;
  5. Before cooking a fresh composition, the “jellyfish” is washed;
  6. Protect from the sun's rays, the temperature in the room should be from 18 to 25 degrees.

Zoogley storage rules

Usually it is used only in summer. For storage in winter, the body of the fungus is placed in polyethylene (or dried) and put in the refrigerator in a form for storing vegetables. To dry the jellyfish, take it out of the container, wash it, put it in a deep bowl, covered with gauze. Turn over all the time until completely dry. To revive the fungus, you need to make a drink from tea according to the classic recipe and put it in a liquid. In a week, the zooglea will come to life. Pour the first composition after this method, and the next composition can already be drunk with pleasure.

Video: Kombucha at home

The peak of popularity of kombucha falls on the beginning of the 80s. Then this miracle product, and as such it was recognized by both the people and medicine, was present in almost every family. And no one considered the incredible consumption of sugar and tea, since the panacea for all diseases was worth such sacrifices. Over time, he went into oblivion, and was replaced by various dietary supplements. But everything is returning to normal, and today there is again increased interest and demand for kombucha.

Kombucha Features

Official medicine has proven that kombucha (aka kombucha, medusomycete) really has therapeutic and prophylactic properties and can become an alternative to expensive pharmaceuticals. The unusual taste of the drink increases the tone of the body, gives strength and vigor, and, in addition, successfully fights various diseases.

The popularity of kombucha is also explained by unpretentiousness. Create the minimum conditions for it, the necessary nutrient medium in the form of sweet tea, and it will grow and develop very rapidly.

The biological origin of the puff jellyfish is due to the community of living cultures such as bacteria and yeast. In the course of the vital activity of organisms so different in nature and other characteristics, sweet tea is transformed into a sour drink that has a number of healing properties:

  • the risk of cancer is reduced;
  • the protective function of the liver increases;
  • the metabolism of the body is normalized and the process of purification from toxic substances is activated;
  • the intestinal microflora is restored;
  • the level of cholesterol decreases;
  • the activity of the cardiovascular system and blood pressure are normalized;
  • improves the activity of the gastrointestinal tract;
  • increases the activity of the musculoskeletal system.

And this is not the whole list of advantages of kombucha. A drink saturated with organic acids, vitamins, enzymes and trace elements helps to reduce weight. It quenches thirst, dulls the feeling of hunger, but does not replace the daily diet of food intake. In combination with a fractional and balanced diet, kombucha is an auxiliary component in weight loss. The use of kombucha, as in other therapeutic and prophylactic cases, should be regular.

Indications for use

Based on research on the properties of the tea product, it is recommended as one of the means to help recovery in the following diseases:

  • ARI, influenza, tonsillitis;
  • scarlet fever;
  • diseases of the ear, throat, nose;
  • viral eye infections;
  • problems with the liver or gallbladder;
  • dysentery;
  • tonsillitis;
  • diphtheria.

A tonic drink can simultaneously serve as a diuretic and choleretic agent. It also helps with hypertension, hair loss, nail fungus and various cosmetic procedures.

Contraindications

Not everyone is allowed to use kombucha. For a certain category, there are contraindications: with increased acidity of the stomach, patients with diabetes mellitus, drivers are allowed to use only a fresh tea drink, and those who have problems with fungal diseases should refrain.

The process of growing kombucha at home is simple, but requires accuracy and consistency. The procedure itself takes about a month and a half, so patience and time will be needed.

Growing kombucha from tea leaves

  1. It is advisable to prepare a glass jar with a volume of 3-5 liters, wash it well with the addition of soda and leave to dry naturally.
  2. To prepare the nutrient solution in a separate container, 3 tsp. green or black brewed tea pour 1 liter of boiling water and leave for 15 minutes. Drain, add 5 tbsp. granulated sugar and cool.
  3. Pour the cooled tea into a prepared jar and place in a warm but dark place.
  4. Cover the neck of the glass container with a piece of gauze and tie with a braid or fix with an elastic band. Periodically, it is necessary to open for a short time to replenish the liquid with oxygen.
  5. After four days, you will notice a thin film on the surface - this is the beginning of the birth of kombucha.
  6. After 10-20 days, the contents of the can lighten up, a sour smell appears, and the film increases in size.
  7. By the end of the process, a mobile thickened substance is already formed on the surface. The formed kombucha is transferred to a clean container and a new nutrient solution is prepared, with which it is poured.
  8. The drink in the first jar is ready, it must be filtered and stored in a cool place so that the fermentation process stops. And the infusion of the second jar can already be consumed after 5-7 days.

The grown jellyfish is unpretentious, but requires care, cleanliness and lack of bright light.

Growing from wild rose
Rosehips themselves are saturated with vitamins, and a drink made from them is a godsend for boosting immunity, preventing viral diseases and other disruptions in the body.

Select dense, evenly colored fruits, rinse, dry a little and chop. 6 art. l. pour into a clean thermos, pour boiling water in a volume of 0.6 liters. Close and put for 6 days. Then strain and pour into a three-liter jar, adding a tea solution there, which is prepared in the following proportion: 1 tbsp. l. tea, 5 tbsp. l. sugar, and steep boiling water in a volume of 220 ml. Place gauze on the neck of the container and leave in a warm, dark place. Then repeat the previous method.

You can independently grow a jellyfish from homemade vinegar of your own preparation.

Dry the washed sour apples and grate with the core on a coarse grater. Fruit puree (approximately 400 gr) put in a clean jar and pour cold boiled water. Add 150 g honey and 15 g yeast. After that, the container remains open, it must be placed in a dark place. The mass should be stirred daily.

Ten days later, applesauce must be squeezed through several layers of gauze, and the resulting liquid should be poured into a clean jar, covered with a thin cloth and left for 1.5-2 months for fermentation.

At the final stage, the liquid becomes lighter, and a multi-layered jellyfish grows on its surface. It is transferred to a clean bowl with sweet tea and then according to the usual scheme.

Kombucha on beer
Mix 100 ml of live beer, 10 ml of wine vinegar, 5 g of sugar. Pour the mixture into a container, cover the neck, and put in a warm place until a film forms on the surface. When it is 2 mm thick, then move it to a bowl with sweet tea. A week later, the drink is ready.

These methods are for those who are just starting to master the art of growing kombucha. For those who are more fortunate and have shared a piece of the finished product with them, the process is greatly simplified. And if you connect fantasy, then the healing qualities of the medusomycete increase significantly.

Herbal kombucha
The cooking scheme is standard, and select the herbal collection depending on your disease. Pour 200 grams of herbs with 3 liters of boiling water and leave overnight. Add a little honey to the infusion and place the mushroom in it. A week later, tea-infusion will be obtained. Thus, you can prepare a tonic drink based on hibiscus.

Growing kombucha is part of the task. Proper care is required for its development and reproduction. An indicator of health, first of all, is buoyancy. If he began to sink to the bottom and does not rise to the surface on his own, it means that he is “ill” and it is time to save him. The optimum temperature should not exceed 25 degrees.

The thickness of the jellyfish should not exceed 4 cm. The excess layer that appears should be carefully separated from the top and laid out in other jars. The lower part is the most productive.

The term of the curative effect of the finished drink is not more than one month. Subsequently, taste qualities are also lost, it will be more vinegar than an invigorating elixir. Undissolved sugar that has fallen on kombucha is one of the causes of jellyfish disease.
