I cooked this salad the other day as part of the "Relive old recipes" campaign on one of the sites. The salad is very satisfying, with a spicy sweet and sour note of dried apricots. More suitable for a variety of winter menus.

Ingredients:

  • Boiled chicken fillet - 1/2 piece (80 grams).
  • Dried apricots - 50 grams.
  • Medium carrot - 1 pc.
  • Boiled eggs - 2 pcs.
  • Walnuts - 50 grams.
  • Greens (I have cilantro).
  • Mayonnaise.
  • Lemon juice to taste.

Cooking:
Chicken fillet, dried apricots, carrots finely chopped.
Chop the nuts with a knife.
Grate the eggs on a coarse grater.
Chop greens.
Put in layers in a salad bowl: chicken fillet, carrots, eggs, dried apricots, walnuts.

Salad with kumquat, arugula and chicken breast

Ingredients for two servings:

  • arugula - 40-50 g,
  • kumquat - 4 pcs.,
  • chicken / turkey fillet - 1 pc. (1/2 breast)
  • orange - 1/2 pc.,
  • Dijon mustard - 1 tsp,
  • light balsamic vinegar - 1 tsp,
  • olive oil - 1 tbsp. l.,
  • sugar - 1/2 tsp,
  • coarse salt to taste
  • pepper to taste
  • frying oil.

Cooking:
Salt and season the chicken / turkey fillet just before frying. Fry on both sides in a heated pan with oil. Fry at a high temperature, then remove from the stove, cover with a lid and thus allow to cool so that the meat remains juicy.
Then cut the meat into small thin pieces.
Cut the kumquats into slices, removing the seeds-nucleoli.
Wash the arugula.
Sauce: squeeze the juice from half an orange, add sugar, balsam, mustard and oil. Close the jar of sauce and shake well.
In a cup, mix arugula, kumquat and fillet pieces, pour over the sauce, salt and pepper.

Salad Crow's Nest

  • 3 boiled potatoes,
  • 1 large onion
  • 3 hard boiled eggs
  • 500 g boiled chicken meat,
  • 100 g fresh (fried) or pickled mushrooms,
  • mayonnaise,
  • 1-2 tbsp. l. vinegar 6%,
  • 2-3 tbsp. l. vegetable oil,
  • salt and pepper to taste.

Potatoes - large straws, fry until cooked in vegetable oil (you can immediately fry raw until cooked, you can cut the boiled into cubes and fry, but the boiled will crumble). Peel the onion, cut into half rings (thickness - as you like) or quarter rings, marinate in salted vinegar (I add a little more sugar) for 1-2 hours. Cut boiled meat into strips. Cut the protein into thick strips, and grind the yolk with salt, mayonnaise and finely chopped parsley. Divide into 6-7 equal parts and cut into small balls, giving them an oval shape. Put a layer of potatoes on a large flat dish, on it - onions, then meat, mushrooms and squirrels. Pour the surface with mayonnaise, sprinkle with herbs, berries, put "eggs". I water the surface with a chaotic "stream" to create a look of anarchy and not much mayonnaise. I don’t have enough yolks for the “testicles”, I still rub the processed cheese for the mass. All components, as befits a decent crow's nest, are laid out very inaccurately so that "fir-trees-sticks" stick out.

Salad "Hawaiian"

I took the recipe for "Vkusnyatina" salad and upgraded it a bit

  • 500 g chicken fillet,
  • 2 eggs,
  • 2 tbsp. l. starch,
  • 2 tbsp mayonnaise,
  • 200 g canned pineapple,
  • salt, pepper to taste.

Boil the fillet and cut into strips. Prepare an omelet from two eggs, starch and mayonnaise. Cool and cut into strips. Pineapple cut into cubes. Mix everything and season with mayonnaise and spices.

Salad "Koyash"

  • 300 g chicken
  • 3 pickles,
  • 150 g cheese
  • 2 onions (I fried)
  • 150 g corn
  • 150 g Korean carrots,
  • 50 g raisins (or walnuts),
  • pack of crackers,
  • mayonnaise, salt, spices. And to decorate pancakes.

Salad "Colored"

Recipe:

  • 2 bulbs
  • 1 carrot
  • 100 g raisins b / bone,
  • 100 g cheese
  • 1/2 can corn,
  • 2 medium preserves cucumber,
  • 300 g chicken fillet,
  • 1 bag of crackers,
  • mayonnaise,
  • salt, pepper to taste.

Peel the onion, chop finely and sauté on the grow. butter, sauté the grated carrots separately.
Rinse raisins, soak for 10 minutes. in boiling water, rub the cheese on a coarse grater, cut the cucumbers into cubes, cut the turkey into cubes and fry in vegetable oil.

A little mayonnaise for each slide. Mix everything before serving.

Chinese cabbage and boiled chicken salad

  • chinese cabbage - half a head,
  • 2 cucumbers
  • 1 medium head of onion,
  • parsley,
  • peeled sunflower seeds - 3 tbsp. l.,
  • boiled chicken meat (I used fillet from thighs and legs, of course, you can also breast, but I didn’t want to),
  • white wine vinegar - 1-2 tbsp. spoons,
  • olive oil,
  • lemon juice - a little,
  • salt, pepper to taste.

Chop the onion, put in a salad bowl and drizzle with vinegar. Let it marinate while the vegetables are cut. Cabbage and cucumbers cut arbitrarily. Parsley can simply be sprinkled with torn leaves, without stems. I just cut the meat into pieces. Put the vegetables on the onion, and then the meat. Sprinkle seeds on top, pour oil, lemon juice, salt, pepper and mix.

Salad with chicken and Korean carrots

  • Korean carrot,
  • chicken fillet,
  • mayonnaise,
  • greens to your liking.

I put everything in my eyes. Carrots must be tasty. The whole taste of the salad depends on this. And I used to do the same, but instead of chicken I threw boiled squids cut into half rings. I did it without greens.

Salad from Amsterdam


  • 100 g of any green salad,
  • 75 g boiled chicken,
  • 10 pieces. pitted black olives
  • 150 g champignons,
  • 50 g chips with paprika,
  • 1 st. l. butter or margarine for frying (I fried in odorless vegetable oil),
  • 1 egg
  • 1 small mango or mango juice, some mayonnaise.

Wash lettuce leaves, dry, tear with hands, put in a salad bowl.
Cut the olives into slices, put on lettuce leaves, cut the chicken into strips.
Beat 1 egg, cut the mushrooms into slices, dip in the egg and roll in crushed chips, fry in butter until golden on both sides, put on the salad.
Mix mayonnaise with mango pieces, or mango juice. (I forgot about mayonnaise, poured only juice).
Tip: Pour batter chips in, little by little, they quickly soak.

Salad "Gorka"

  • 100 g boiled chicken,
  • 120 g sour cream
  • 40 g fresh cabbage,
  • 40 g salted mushrooms,
  • 40 g fresh cucumbers,
  • 40 g boiled potatoes,

Cabbage cut into strips, the rest - into slices, cheese - on a grater. Fill, lay in a slide, sprinkle with herbs.

Delicious salad "Bride"

  • 300 g boiled chicken meat,
  • 200 g cheese
  • 200 g walnuts,
  • 1 boiled carrot
  • 1 can of pineapple
  • 1 jar of champignons,

Cut everything into strips, chop the nuts, add pineapples. Mix everything with chopped garlic and mayonnaise.

Salad "Pomegranate Bracelet"

The recipe is simple: onions, boiled chicken (I replaced it with chicken ham - it turns out much more tender), boiled beets, carrots, potatoes. Everything except chicken - on a coarse grater, finely chop the chicken, coat each layer with mayonnaise, pour mayonnaise on top and sprinkle with pomegranate - and refrigerate overnight. To form a ring: wrap the jar with cling film (so that nothing sticks), put on a dish and form a salad around it. Then you take out the jar - and voila!

Chicken salad "For Mom"

Layers: bottom - Bulgarian pepper in small cubes, then - chopped boiled chicken fillet, top - cheese and mayonnaise. Incredibly fresh salad and low calorie.

Chicken salad with pineapple

I did it a little differently: each layer was lightly sprinkled with roasted and chopped walnuts, in the spring, instead of grapes, I put halves of sweet cherries on top. Very tasty!

  • 1 chicken breast without skin, boiled, chopped;

  • 200 g ham (or boiled sausage),

Another option:

  • 350 g boiled chicken meat (or boiled pork),
  • 150 g prunes,
  • 3 boiled eggs
  • 1-2 fresh cucumbers
  • 150 g hard cheese,
  • mayonnaise,
  • green onion,
  • salt, spices to taste.

Soak prunes in hot water for 1 hour to swell. We cut meat, eggs, cucumbers, onions. Three cheese on a coarse grater. Steamed prunes are slightly squeezed from the water and cut into pieces. We mix everything and season with mayonnaise, if necessary, salt.

Salad "Turtle"

  • Chicken fillet 100 g,
  • cheese 100 g,
  • eggs 5 pcs.,
  • apple medium,
  • prunes 100 g,

Cucumbers cut lengthwise into long strips, also tear the chicken into long fibers, mix with cucumbers, pour in the dressing and mix again. Serve immediately (this action is required).

Ingredients: 200 grams of boiled chicken, 2 pickled cucumbers, 100 grams of champignons, 2 tbsp. olive oil, 100 grams of dry white wine, freshly ground black pepper, salt and parsley.

Recipe: Boil and cut mushrooms into cubes. Grind cucumbers and boiled fillet in the same way. Mix everything, add salt and pepper to taste, season with wine, after mixing it with olive oil. Be sure to sprinkle with chopped parsley before serving.

Salad with chicken and green radish

Ingredients: 300 grams of boiled chicken fillet, 100 grams of green radish, mayonnaise and salt.

Ingredients: 125 grams of lentils, 225 grams of broccoli, 350 grams of smoked chicken breasts, 1 clove of garlic, 1 teaspoon of English mustard powder, 2 tbsp. balsamic vinegar, 4 tbsp. olive oil, 1 onion.

Recipe: Boil the lentils and broccoli, cut the cabbage into small pieces. In another bowl, mix crushed garlic clove with salt, mustard, vinegar and olive oil. Cut the onion and fry in oil for 5 minutes. Add chicken with broccoli and simmer for 2-3 minutes. At the end of cooking, mix with lentils and add dressing.

Salad with homemade chicken and raspberries

Ingredients: 300 grams of chicken pulp, 200 grams of sweet pepper, 3 boiled eggs, ½ cup of raspberries, 1 cup of mayonnaise, salt.

Recipe: Grind the boiled pulp of the bird and combine with the pepper, cut into strips. Add quartered eggs. Season with mayonnaise, lightly salt and add berries.
