The third simple and light snack for the New Year's table is cheese muffins with herbs.

It is also a very tasty and easy-to-prepare appetizer, very democratic - suitable for almost any alcohol. It does not require special skill and a lot of time, but it looks great on the table and smells very fragrant, moreover, if you use some odorous herbs in cooking - parsley, basil or a little tarragon. And also salty spicy cheese. Absolutely a win-win snack option, try it!

For these muffins I use:

  • Butter, melted - 100 g
  • Flour - 250-300 g
  • Soda - 1/2 teaspoon
  • Baking powder - 2 teaspoons
  • Sugar - 50 g
  • A pinch of salt
  • Kefir - 200 ml
  • Egg - 2
  • 100 g of spicy salty spicy cheese - parmesan or hard ricotta, but in general any will do
  • half teaspoon turmeric or curry

From this I get 16-18 muffins, which is quite enough even for a large company.

In muffins, the whole thing is that the dry ingredients and the “wet” ingredients are mixed separately, and then the wet is added to the dry. So: I mix flour, baking powder, salt, soda and sugar in a large bowl. Many people advise to sift the flour carefully, but I sometimes neglect this. After that, I add finely chopped parsley (30 grams) and cheese - 100 grams, finely grated, to the dry ingredients. Options: instead of parsley - dill or basil (green), sometimes I add a little cilantro and a crushed head of garlic to parsley (such muffins go with a bang to beer and wine). In another bowl, mix melted butter, kefir and eggs. Then I pour the liquid into the dry and mix everything lightly. In my opinion, there should be lumps (I always have them, and the muffins turn out great). The dough should be thick and keep its shape, as they say.

The second stage: I take either a standard form for muffins (such):

I put special corrugated pieces of paper for cupcakes-muffins into the forms. And fill the holes in the mold 3/4.

I bake in an oven preheated to 180-200 degrees. I bake 20 minutes.

You can use separate silicone cupcake/muffin molds. They are more convenient, well, for me anyway - they do not need to be lined with paper molds.

You can also bake muffins in a double-triple paper form - then it is better to fill it halfway so that the muffins do not deform during baking.

In general, muffins are such a thing that you can experiment with every time: then, when making berry muffins, I add a little to the dry ingredients - literally 1/4 teaspoon of ginger or turmeric powder. I add a tablespoon of cinnamon to apple muffins in dry ingredients, and add 2-3 large apples, finely chopped (cubes about 1 cm by 1 cm) to the finished dough. You can also add finely chopped pear. If you are tired of sweet muffins, then you need to put less sugar in the dough itself (50 grams), and the filling can be anything - from finely chopped ham-sausages to chicken breast left over from yesterday.

In muffins, the main thing is to understand the cooking method - dry separately, wet separately, then lightly mix, and the filling can be completely varied, where your imagination will take you. Just as I said, you can add some spices to the dry ingredients - turmeric, parsley, ginger, ground red sweet pepper.

  1. We take the dishes convenient for you for kneading the dough. We break the egg, pour in vegetable or olive oil, stir.
  2. Then add kefir. Soured milk is also suitable, as well as buttermilk left after whipping homemade butter.

  3. We rub the Adyghe cheese on a coarse grater or rub it with our hands into crumbs. Other varieties of cheese are also suitable - Cheddar, Parmesan, Gruyère, Russian, as well as ordinary village cheese. You can find recipes for cheese muffins, for the preparation of which processed cheese is used (for example, Druzhba, Creamy, Russian), and sour cream is taken instead of kefir.

  4. Add shredded cheese to a bowl. We stir the dough.

  5. Add salt, ground black pepper to taste, put soda. You can also add some spices to taste. You do not need to extinguish soda with vinegar or citric acid. It will be enough that it mixes with kefir, which contains acid.

  6. Garlic is peeled and crushed with a press.

  7. Finely chop fresh dill.

  8. Add chopped herbs, garlic and sesame seeds to the dough. Sometimes, for a change, I replace sesame seeds with cumin. It gives a spicy taste.

  9. Mix well with a spatula or whisk.

  10. Add carefully sifted wheat flour, mix. Next time you're doing some creative cooking, you can use half wheat flour and half corn flour. Ready-made pastries on the cut will have a beautiful yellow tint.

  11. Put the finished dough into a cake mold. Forms should be filled in 2/3 parts, because our delicacy will increase in size when baking. I prefer to use modern silicone molds, from which pastries can be easily removed without sticking. Old-style metal molds can also be used, but they must first be lubricated with vegetable oil using a whisk.

  12. Cheese muffins are baked on kefir at 180-190 degrees, about half an hour.
