Dogwood jam for the winter without sterilization - step by step recipe with photo:

We begin to cook dogwood jam with syrup. Mix in a bowl or saucepan (in which we will prepare jam) 1 kg granulated sugar with prescription water.

After mixing the sugar mixture, we send it to the stove. While stirring, boil the syrup at a slow boil until it becomes transparent.

With a small amount of liquid, dogwood can be pricked in several places with a toothpick. This will prevent the fruits from cracking during cooking.

We send the dogwood to the boiling syrup, mix. Then remove the bowl from the stove, put it on the table to cool.

After 6-8 hours, the cooled jam is again sent to the stove. Pour the remaining 300 g of sugar into a bowl with dessert. Thoroughly mixing the sugar, boil the jam for 15 minutes at a moderate boil.

A cap of foam rises above the surface of the cornel jam. We make sure that the jam does not “run away” over the edge of the dish.

When cooking on top, we collect a little foam, but it is not necessary to remove all the foam now (in subsequent brews, the amount of foam will be significantly reduced).

After 10 minutes of cooking, remove the dogwood jam from the heat. We leave the jam alone until it cools completely (8-12 hours).

At this time, we catch the foam between the berries. Last time it is enough to boil dogwood jam for 5-7 minutes.

Dropping a small drop on a saucer, we observe it.

The readiness of the dessert is determined drop by drop.

A droplet is held by a bead, which means it is ready. As soon as the drop is retained, without spreading on the surface of the saucer, we pack it in jars for storage for the winter.

Pour hot, boiling jam into prepared sterilized containers, seal tightly. Invert jars onto lids to cool.

It turned out that this is such a sweet and sour berry, it tastes different, depending on when it was harvested. Of course, I was struck by the color of such a workpiece, it is so bright and reminded me of a ruby. In general, I liked the delicacy, it was unusually tasty and very beautiful, I just wanted to eat more of it with.

My friend poured it into a jar for a gift so that I could pamper my kids. And I have such inquisitives that they will climb into a vase with contents, and then they will sit and lick their fingers and ask for more. I did not think for a long time, wandered around the Internet and found a couple of wonderful recipes that I liked for their simplicity and accessibility. As you guessed, I will share them with you.

As usual, we will start with the easiest options, we will get to five minutes, but for those who are interested, we will cook such jam according to caucasian recipe, and also make a blank without cooking. Moreover, the trick is that this dessert retains all its properties and vitamins after heat treatment. I don’t know how true this is, but it’s written on other sites.

And I also realized that such a delicacy can cheer everyone up and charge them with energy and positive. Imagine it would be nice. Or maybe it is, because I returned from my girlfriend completely happy).

To be honest, I thought for a long time about what this treat looks like, and then suddenly I remembered fresh rose hips, here the berries are the same red in shape and color. Therefore, let's not spoil them, and cook them as a whole, and so that they do not shrink, put them in a sweet syrup.

No difficulties should arise, so go ahead and get to work. Note that water is used when cooking, but you can cook without it, that is, in your own juice.

The proportions of berries and sugar can be taken 1 to 1 or 1 to 1.5, depending on the dogwood acid. Taste it before cooking.

We will need:

  • fresh dogwood - 2 kg
  • sugar - 2 kg
  • water - 500 ml

Stages:

1. Select whole and juicy fruits of ripe dogwood in a bowl. Then rinse the berries under running water, while removing the twigs and sticks, if you suddenly accidentally fell into the bowl.

2. In order for the dogwood to remain safe and sound, you need to dip the fruits in a sweet syrup that you prepare in advance. Mix water with sugar and bring the mass over a fire to an active boil.

3. As soon as the bubbles have gone and the sugar grains have dissolved, throw in the red berries. Turn off the stove and leave to languish, move the basin to the table, let the dogwood soak in hot syrup for about 5-6 hours, you can leave it overnight.

4. And then bring the jam back to a boil and remove the foam. It comes out very savory and the kids will be happy to lick it off a spoon. So, cook for 15 minutes over medium heat, you can increase it to 30, depending on what consistency you want to get. But, do not forget, when the delicacy cools down, it will still be thicker than when warm.

Pour the hot blank into clean sterile glass jars, close the lids and let cool to room temperature. And then store in the refrigerator or in the cellar. Happy discoveries!

Advice! Do not forget to pour the treat into your vase so that today you can already drink tea with a crust of bread or, while spreading a piece of dogwood jam.
