Somehow I came across a recipe for cupcakes that did not contain margarine and I thought: “But should I cook them?” As soon as everyone was in the house necessary products and I started baking.

The original composition of the products.

As we can see, our pastries have a simple composition: sugar, flour, mayonnaise, egg, soda, vanillin.

1. Cooking products with a photo.

We take the eggs out of the refrigerator and wash them in water from contamination. Then break them into a bowl and beat lightly.

Pour a glass of sugar to beaten eggs and mix for 30 seconds. It is not necessary to beat strongly, because. there is no particular need for this.

Sugar and eggs are lightly beaten, add mayonnaise to them. In my jar (washer) the weight of mayonnaise is 220 gr. I had to add 30 grams from another jar to get the weight - 250 grams. Mix the mass until the lumps disappear.

Mayonnaise is mixed with sugar and egg into a homogeneous mass, now let's add flour.

I add flour in portions of 2 tbsp. spoons. It is so convenient for me to mix the dough - no lumps form.

I sift the flour through a small sieve, tapping on its edge with my hand. This method is simple and fast - I like it.

On the third sieve, i.e. at 6 st. spoon add vanilla. It seems to me that it is at this moment that vanillin will disperse well in the test. And then we continue kneading the dough until all the flour is over.

In the end, we should get a pouring dough, which should resemble thick sour cream.

AT this dough you can add chopped nuts, raisins or cocoa. Just pay attention to the amount of flour. It may need to be added to 2 tbsp. less spoons.

I always say that flour should be added in portions, gradually.

And now let's proceed to the final stage - the preparation of soda.

Soda should be added to the dough last, so as not to disturb the structure of the dough by frequent mixing.

We take a container into which we pour 0.5 teaspoons of soda. Then we need 1 teaspoon of 9% vinegar, which we fill with soda. During extinguishing, foam rises, so choose a container that is not very small.

The soda has been extinguished and now you can add it to the dough. Mix everything lightly and leave for 5 minutes to rest.

Soda contributes to the formation of bubbles in the dough, thereby, when baking, holes form inside the product.

The dough rested. We prepare molds for cupcakes and pour into each dough two-thirds of its height. My molds are small, so the dough takes 1.5 tbsp. a spoon.

If you have silicone molds like mine, then you can not lubricate them with oil - the dough will not stick.

If the molds are iron, then they need to be greased with margarine or sunflower oil.

We put the filled forms in a preheated oven and bake for 20 minutes at a temperature of 220 degrees.

Tip: This baking temperature is suitable for those who have electricity in the network strictly observed at 220-240 degrees. If the voltage is below normal or above, then you will need to experiment with the temperature. Either add it or subtract it.

20 minutes have passed, but you may have more (remember about the temperature), but the numbness, as soon as you see that the muffins begin to blush, pierce them with a toothpick or a match without sulfur. If when you pull the stick out of the dough it remains dry, it means that the pastry is ready and it's time to get it out of the oven.

I usually lay out the finished pastries on a wooden board, which I cover with a napkin and let them cool. Once the cupcakes have cooled, it's time to put them in a bowl and serve.

  1. We turn on the oven, it should warm up to 180 ° C.
  2. Let's wash the raisins warm water. Pour hot so that the water completely covers the raisins.

  3. We take a bowl in which we will knead the dough, beat in the eggs, add sugar and beat this mixture well with a mixer or a whisk.

  4. Now add mayonnaise to the thoroughly beaten egg-sugar mixture and stir again with a mixer.

  5. In a separate bowl mix sugar, flour and baking powder.
  6. Add flour mixture. Mix thoroughly with a spatula or spoon. Let's leave it for a while.

  7. Let's talk about raisins. Drain the water and place the raisins on a paper towel. Wet off excess moisture. Put the raisins in a bowl and add a spoonful of flour. Mix well. We need this so that the raisins do not sink to the bottom of the mold when baking.

  8. Add raisins to the dough and mix everything. Now that the dough is ready, let's prepare the form.

  9. Lubricate our form with butter or margarine. Dust the top with flour.
  10. We spread the dough evenly in the form and put in the oven. Bake at 180°C for about 40 minutes. Check readiness with a toothpick. The stick comes out clean from the cake, which means it is ready. If you bake the same dough in small molds, then it will take a little less time, 25-30 minutes.

We take out the finished cupcakes from the oven and decorate with powdered sugar on top. Let it cool for 10 minutes, and you can serve it with a cup of aromatic tea or good coffee. I offer my children cupcakes with juices, milk, compotes or drinkable yoghurts. Enjoy your meal!
