  1. Wash cucumbers, pour cold water and leave for 3 hours for soaking, so that they absorb part of the liquid - the procedure must be carried out so that the fruits crunch in a pickled form.

  2. Meanwhile, prepare the tomato juice. We wash the tomatoes (a little less than 1 kilogram) and remove the skin - for this we make a cross-shaped incision on each tomato and place it in boiling water for a couple of minutes. Then we pour over with cold water and peel off the skin, which will be very easy to remove.

  3. We interrupt the peeled tomatoes in a blender or grind in a meat grinder. We also add peeled garlic and onion (medium size) for chopping. We measure the resulting amount of tomato juice and pour it into a saucepan - for every 700 ml of juice, add salt, sugar, vegetable oil and vinegar. Bring to a boil and boil for 5 minutes, removing the foam.

  4. We cut off the tips of the soaked cucumbers, and then chop them into circles 0.5-0.6 cm thick. You don’t need to cut them smaller, otherwise they will not be crispy!

  5. Pour chopped cucumbers into a saucepan with boiling tomato sauce, gently mix with a spoon.

  6. Boil for 8 minutes, stirring - during this time the cucumbers will settle a little and completely immerse themselves in the tomato sauce, while they will retain their color and remain crispy.

  7. We lay out the cucumbers in hot sterilized jars, filling them to the very top along with tomato sauce in which they were cooked. We cover (but do not roll up!) With lids and place the jars in a saucepan with hot water so that the container does not burst due to temperature changes.
